Allium sativum L. is a bulbous herbaceous plant belonging to the Amaryllidaceae family. Coming originally from Central Asia, this precious spice has a history stretching back thousands of years and is now widely cultivated and consumed all over the world. Thanks to its antioxidant, anti-microbial, hepatoprotective properties, garlic had already been used in antiquity as a remedy for intestinal disorders, atherosclerosis, respiratory infections, fungal skin diseases. Its pungent smell and taste is due to organosulphur components such as allicin; when fresh garlic undergoes appropriate heat treatment, aged garlic is obtained.
